This is the ultimate vegan cookout meal: sweet potato black bean burgers, watermelon basil salad, buffalo cauliflower wings, and vegan mac n cheese. Thank me later ;)
Time: 50 mins or if sweet potatoes need to cook ~ 1 hr 30 mins
Makes: 6-8 patties
Ingredients:
2 Large Sweet Potatoes (can bake ahead of time)
2 Cups of Black Beans rinsed and drained (approx. 2 cans)
1 Cup of Grains (Quinoa or Brown Rice)
1/2 cup of Ground Nuts (Walnuts or Pecans)
1/2 Onion, chopped
1/2 Tsp. Chipotle Powder
2 Tsp. Cumin
1 Tsp. Paprika
1 Tbsp. of Oregano (or an Italian Herb Blend)
For the Pan: Oats or Oil of choice

Preheat the oven to 400º F. Wash the potatoes and stab them to create holes. Bake the sweet potatoes for 40-50 minutes. Stab them with a fork to check if they are thoroughly cooked. The fork should go in easy; you don’t want them to be firm.
While sweet potatoes bake, cook the grains as the package suggests or see below.
Quinoa: Bring two cups of water to boil in a pot. Pour in 1 cup of quinoa, stir for a minute. Cover pot and reduce heat to Low allowing the quinoa to simmer. It typically takes 12 minutes to absorb all the water.
Brown Rice: I use my Insta Pot on the high-pressure setting for 17 minutes using enough water to cover the rice by 1/2 inch, OR cook rice on the stovetop like the quinoa (bring water to boil then lower to simmer).
Pour the drained black beans into a large bowl, using a fork slightly mash them.
Chop the nuts slightly, not into a powder. You can pulse in a blender or use a knife.
Once the sweet potatoes are cooked and cool enough to touch, remove the skin and mash the potatoes with the black beans. Reset the oven temperature to 375º F.
Next stir in your grains, nuts, chopped onion, and spices.
Taste your mixture to balance spices. If the mixture seems too wet, add more nuts, ground oats or flax.
Slightly oil a baking sheet. Or for an oil-free version spread oats out on the pan to prevent sticking.
Using a spoon and your two hands make patties to place on the pan.
Bake for 20 minutes on one side. Flip the patties using a spatula. Bake for 15 minutes on the other side or until you reach desired crispness.
Stack it up!! Serve hot with all the fixing’s your heart desires. Ideas to place between two buns, a butter leaf lettuce wrap, or on a bed of greens.
